I think Snee Koek is dutch for cut cake. This cake was a regular treat at my Dad’s house when he was growing up. It was also something I grew up with, but I knew it as Snake Cake.
1tsp ground cloves
1tsp ground ginger
1 1/2 cups of sugar
3tsp bicarb soda
3 cups plain flour
Mix together, and pour into a greased loaf tin. Bake for approx one hour in a moderate oven (180c).
This cake is quite dense and often slightly undercooked in the center, yummy!
It also come out with a very hard crust, which I love. But if you prefer it softer, wrap it in a tea towel when it comes out of the oven.
