At the moment everyone seems to be talking about or making banana bread, and all this talk, made me want some too.
As my loaf tin is currently on loan, I decided to make muffins (I combined about 4 recipes so that I could have them exactly as I wanted)… they were so easy and delicious!
Ingredients *I never really measure anything properly so all these are approx measurements
2-3 bananas
60 grams of butter
1 tsp or so of vanilla bean pastse
1.5 cups brown flour#
3 tsp baking soda
2 eggs
1/4 cup apple sauce
1/4 cup brown sugar – I will probably use less next time, especially if the bananas are extra ripe.
Squeeze of golden syrup
A little milk
Melt butter in a saucepan. Remove from heat add sugar, golden syrup and vanilla. mix until smooth. Add eggs. Mix until smooth. Sift in flour and baking soda. Don’t mix yet. Add the mashed bananas and the apple sauce. mix until just combined. add extra milk to right consistency. Put in muffin tins and bake at 180deg until golden brown.
# a handy hint I learned (off TV I think) is to not worry about having Self Raising Flour just by plain flour and have baking soda handy. So then you don’t have buy many different types of flour. I just have wholemeal and plain and add the baking soda as needed.
