I was watching Jamie at Home the other night and he made this very quick and easy recipe. ahh what I wouldn’t do for his vegetable garden and gardener! Click here for his real version
8 good quality pork sausages
fresh peas, in their pods
Parmesan cheese for serving
a few sprigs of fresh oregano
many cloves of garlic, minced
bunch fresh basil
1 can tomatoes
salt and pepper
Heat a large saucepan and add a good amount of olive oil. Snip the sausages apart, then squeeze the meat out of the skins striaght onto the frying pan so that you get small little meatballs. Keep frying and turning the meatballs until they’re cooked through.
Meanwhile, put the spaghetti into a large pan of salted boiling water and cook according to the instructions.
To make your tomato sauce, heat a separate pan and pour in some olive oil. Add the garlic cook on medium for under a minute. Add the tomatoes and season with salt and pepper. Bring to a simmer. add a dash of balsamic vinegar – I forgot this step but it was still good. add the basil into the pan.
Add the oregano to the pan of sausage meatballs, tossing everything together. Cook for around 30 seconds.
Add pasta to the bowl, then sauce and sausage.
Top with more basil leaves and grated parmesan cheese. and also fresh peas, which I also forgot!
